Recipe: Lime Mayonnaise

Ingredients

  • 1 cup mayonnaise
  • 2 tbs lime juice
  • 3 tbs sour cream (optional)
  • cooked prawns or lobster, to serve
  • lime wedges, to serve
Method
Combine mayonnaise with lime juice, sour cream, salt and freshly ground black pepper. Best served with seafood on a platter, lime mayonnaise and lime wedges. Can add Tabasco or sweet chili sauce to taste.

Recipe: Sweet Potato Mash

Ingredients

  • 1kg orange sweet potato, peeled, diced
  • 50g butter, chopped
  • Sea salt
  • Balsamic vinegar
Method
  1. Cook sweet potato in a saucepan of boiling water until tender. Drain water from the saucepan.
  2. Return sweet potato to warm saucepan. Shake saucepan over low heat for 30 seconds or until excess moisture evaporates. Remove from heat.
  3. Using a potato masher, roughly mash sweet potato. Gradually add butter. Mash until smooth. Season with sea salt (and pepper if you prefer).
  4. Drizzle with vinegar. Serve.

Recipe: Banana Muffins

Ingredients

  • 2 1/4 cups self-raising flour
  • 3/4 cup caster sugar
  • 125g butter, melted, cooled
  • 3/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 2 large bananas
Method
  1. Preheat oven to 180°C.
  2. Line a 12 x muffin pan with paper cases.
  3. Sift flour into a large bowl. Stir in sugar.
  4. Whisk butter, milk, eggs and vanilla essence together.
  5. Mash up bananas using a fork and add to the liquid mixture.
  6. Add liquid mixture to dry ingredients. Mix until just combined.
  7. Spoon batter into cases. Bake muffins for 15 – 20 minutes, or until light golden and cooked through.
  8. Stand in pan for 10 minutes before turning onto a wire rack to cool completely.
Notes
  • This recipe makes 12 muffins
  • It is derived from this recipe which I also recommend. Use caramel easter eggs, jersey caramels or something similar without the bananas if you wanted to try that recipe.
  • You can make more flavors than just banana – you can leave out the vanilla essence and make apricot, choc chip, chocolate, mocha, blueberry etc.
