Recipe: Banana Muffins

Ingredients

  • 2 1/4 cups self-raising flour
  • 3/4 cup caster sugar
  • 125g butter, melted, cooled
  • 3/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 2 large bananas
Method
  1. Preheat oven to 180°C.
  2. Line a 12 x muffin pan with paper cases.
  3. Sift flour into a large bowl. Stir in sugar.
  4. Whisk butter, milk, eggs and vanilla essence together.
  5. Mash up bananas using a fork and add to the liquid mixture.
  6. Add liquid mixture to dry ingredients. Mix until just combined.
  7. Spoon batter into cases. Bake muffins for 15 – 20 minutes, or until light golden and cooked through.
  8. Stand in pan for 10 minutes before turning onto a wire rack to cool completely.
Notes
  • This recipe makes 12 muffins
  • It is derived from this recipe which I also recommend. Use caramel easter eggs, jersey caramels or something similar without the bananas if you wanted to try that recipe.
  • You can make more flavors than just banana – you can leave out the vanilla essence and make apricot, choc chip, chocolate, mocha, blueberry etc.
