
Ingredients
- 2 1/4 cups self-raising flour
- 3/4 cup caster sugar
- 125g butter, melted, cooled
- 3/4 cup milk
- 2 eggs
- 1 teaspoon vanilla essence
- 2 large bananas
Method
- Preheat oven to 180°C.
- Line a 12 x muffin pan with paper cases.
- Sift flour into a large bowl. Stir in sugar.
- Whisk butter, milk, eggs and vanilla essence together.
- Mash up bananas using a fork and add to the liquid mixture.
- Add liquid mixture to dry ingredients. Mix until just combined.
- Spoon batter into cases. Bake muffins for 15 – 20 minutes, or until light golden and cooked through.
- Stand in pan for 10 minutes before turning onto a wire rack to cool completely.
Notes
- This recipe makes 12 muffins
- It is derived from this recipe which I also recommend. Use caramel easter eggs, jersey caramels or something similar without the bananas if you wanted to try that recipe.
- You can make more flavors than just banana – you can leave out the vanilla essence and make apricot, choc chip, chocolate, mocha, blueberry etc.
